All my favorite recipes begin in the same way: “Open a bottle of Wine”  So that is how Fraulein and I started our evening of cooking together.

Fraulein’s first recipe was  Spinach and Ham Pinwheels.

Starting with a sheet of crescent dough, Fraulein pressed it out on a small cookie sheet.  She then mixed an 8 oz. container of whipped cream cheese and a 6.5 oz. container of Alouette Garlic and Herb cheese.  (this is enough for at least two recipes).  a thick layer of the cheese mixture was spread on the dough followed by layer of fresh baby spinach and finally very thin sliced smoked ham.  Fraulein says that smoked ham tastes much better in this recipe than a sweet or honey ham.

Roll the dough from the long end into a tight roll, pinch the seam closed and then slice into 12 slices and place them on a baking sheet.

while these are baking at 350, for 15 to 20 minutes you have a little time to refill your wine glass!

Once they are nicely and evenly brown remove them to cool.   Place on presentation plates.  We garnished with fresh parsley and slices of orange peppers, picked fresh from my garden!

HOUSEMATE managed to get the first sample, and labeled them “Great!- are there any more?”

Next came Fraulein’s Spicy/Sweet Chicken Bites

Pour more wine and then cut a pound of bacon strips into three sections each

Slice a pound of boneless, skinless chicken breasts into bite sized pieces (about a half inch by 1 and 1/4 inches) roll each chicken piece in a piece of bacon and insert a toothpick to hold in place

Make a ‘dredge” mixture from 2/3 Cup of Brown Sugar and 2 Tablespoons of chili powder.    Coat each piece of bacon wrapped chicken in the dredge and place on a wire rack on a cookie sheet.

Bake these at 350 for about 30 minutes – More wine time!

Once they are a beautiful brown color, drizzle with the sauce of your choice (we chose BBQ) and place on a presentation spoon.
